Garlic Butter Mushroom Risotto

So Jamie sends me a message today and wants to know if now is a good time to do a trial run of a risotta recipe she wanted to try. I'm elbow deep in making meatballs but told her to come on down. We are in there just a cooking and laughing, and if you know me then you know I'm constantly taking food pictures and so I said, "We should do a food blog."
Well, here we are and this is how the cooking went.....

We started out letting the Arborio rice soak up the chicken broth.


Then Jamie kept a close eye on that (while sipping some Fuzzy Navel) as I got the portobello mushrooms going. I gotta tell ya, its smelling pretty good at this point since both skillets also have garlic and butter in them.



Its time to throw in some fresh spinach and the color kicks the value up a little now.





All that's left is to serve it up on a pretty plate, top it with some parmesan cause everything is better with cheese, a slice of lemon to brighten it up and tasting time is HERE!
